Dinner

Seared lamb fillet, olive tapenade, parsley aioli, pea salad

Charred baby cos, pangratatto, parmesan dressing, speck (no anchovies)

Main

SA free-range chicken breast, du Puy lentils, confit carrot puree, micro radish

or

Seared NT barramundi, shellfish veloute, vanilla oil, watercress (served with a side salad)

Dessert

Meringue, Chantilly cream, seasonal fruit compote, blueberry gel

Serafino tiramisu, salted caramel biscuit with mascarpone & chocolate and hazelnut toffee.
